Bao buns with popcorn shrimp

This recipe is perfect when you want to impress your dinner guests! Popcorn shrimp made with our cooked Vannamei shrimp in bao buns with tangy mango, chili cucumber, spring onion and cilantro – incredibly delicious!

Recipe for 2 large servings:

Popcorn shrimp:

Glaze for the shrimp:

  • 1/2 dl soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2–3 tbsp honey
  • 2 garlic cloves
  • 1 tbsp gochujang
  • 2 tsp brown sugar

Soy, lime and garlic mayonnaise:

  • 1 dl mayonnaise
  • juice of 1/2 lime
  • 1–2 garlic cloves
  • 1 tbsp soy sauce

Other accompaniments:

  • 10 bao buns
  • 1/2 cucumber
  • 1 tbsp crispy chili oil
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • 1/3 mango
  • 1 red chili
  • 1/2 lime
  • Fresh cilantro
  • 2 spring onions

Instructions:

  1. Peel the shrimp and mix together all the ingredients for the batter (flour, garlic, cornstarch, baking powder, water, salt and pepper). Add the shrimp to the batter and let rest in the fridge for about 20 min.
  2. Mix the mayonnaise with lime juice, garlic and soy sauce and season to taste. Add more of any ingredient if desired.
  3. Prepare the vegetables: cut the cucumber into thin sticks and mix with crispy chili oil, sesame oil and rice vinegar. Also cut the mango into thin sticks and top with thinly sliced chili and lime juice. Thinly slice the spring onion.
  4. Mix all the glaze ingredients in a frying pan and heat over medium heat until it reaches a syrupy consistency. Stir regularly so it doesn't burn.
  5. Fry the shrimp: heat the oil to 180°C and then add the shrimp one by one. Fry a few at a time so they don't stick together, and make sure the oil stays hot enough throughout the whole frying process, otherwise the batter risks coming off the shrimp. Place on a rack and let the excess oil drain off slightly.
  6. When the shrimp are done frying and the glaze has reached a syrupy consistency, toss the shrimp into the glaze. Stir gently until all the shrimp are coated.
  7. Build the bao buns and enjoy!
