Captain Royal's Pesto Pasta with ASC-Certified Vannamei Shrimp!

A quick weekday favorite that feels luxurious without being complicated. Perfect when you want to impress with minimal effort. The recipe can also be found on the back of the bag!

Ingredients:

  • 300 g Royal Foods ASC-certified Vannamei shrimp
  • ½ fresh chili
  • 2 garlic cloves
  • 3 tbsp rapeseed or olive oil
  • Salt & pepper to taste
  • 2 dl cooking cream
  • 1 tsp Dijon mustard
  • 2 tsp pesto
  • 75 g feta cheese
  • ½ chicken stock cube
  • ½ dl chopped parsley
  • 2 tbsp squeezed lemon juice
  • Preferably 1 pack of fresh tagliatelle

Instructions:

  1. Thaw the shrimp.
  2. Press the garlic, finely chop the chili and mix with the oil and shrimp in a bowl.
  3. Heat a pan, add a little butter if desired and fry the marinated shrimp for approx. 30 seconds per side. Season lightly with salt and return the shrimp to the bowl.
  4. Pour the cream, stock cube, pesto and Dijon mustard into the pan. Bring to a boil, whisking continuously.
  5. Add the feta cheese and let it melt into the sauce. Season with salt and pepper.
  6. Mix the freshly cooked pasta with the sauce, shrimp and parsley.
  7. Finish with squeezed lemon juice and freshly ground black pepper.
  8. Serve with grated parmesan.
