Crispy Shrimp Balls with Glass Noodle Salad

Captain Royal's Vannamei shrimp are firm, fresh and full of flavor. They're quickly transformed into crispy balls with lime, chili & ginger. Served with a glass noodle salad and a fresh dressing with Asian flavors!

Recipe for 2 people:

Shrimp Balls:

  • 300 g Captain Royal's Vannamei shrimp
  • 1 lime (zest)
  • 4 cm ginger
  • 1 red chili
  • 3 garlic gloves
  • ½ yellow onion
  • 3 spring onions
  • ½ bunch coriander
  • 1,5 tbsp cornstarch
  • 1,5 tbsp soy sauce
  • 1 msk sesame oil
  • A pinch of salt
  • 1 dl panko
  • Rapeseed oil for frying

Glass Noodle Salad:

  • 100 g glass noodles
  • 1 carrot
  • 1 pak choi
  • ½ cucumber
  • ½ bunch coriander
  • 1 red chili
  • Sesame seeds

Dressing:

  • 0,75 dl soy sauce
  • 1 tbsp rice vinegar
  • Juice from ½ lime
  • 2 tsp honey
  • 1 tsp sesame oil
  • 1 garlic clove, grated

Instructions:

  1. Thaw & peel the Vannamei shrimp. Finely chop into a mince.
  2. Finely chop onion, spring onion, garlic and chili. Roughly chop the coriander and grate the ginger.
  3. Mix the shrimp mince with all the onion, chili, ginger, coriander, seasonings and cornstarch.
  4. Shape the mixture into small balls and roll in panko.
  5. Fry the balls golden in oil, approx. 3 min per side.
  6. Mix all the ingredients for the dressing.
  7. Shred the vegetables for the glass noodle salad and cook the glass noodles.
  8. Toss the vegetables with noodles, sesame seeds & dressing.
  9. Top the salad with the Vannamei balls and enjoy!
