Cured Wild Salmon with Notes of Gin & Grapefruit

Captain Royal's MSC-certified wild-caught salmon fillet is built on Royal Foods' trinity: sustainability, high quality and what is perhaps the market's most competitively priced salmon fillet! The salmon fillet is perfect for curing, which is exactly what we do in this recipe!

Ingredients:

Instructions:

  1. Mix sugar and salt.
  2. Coarsely crush the pepper in a mortar and mix in.
  3. Distribute the mixture over the salmon and gently massage on both sides.
  4. Squeeze over the grapefruit juice and drizzle on the gin.
  5. Cover with cling film and cure in the fridge for 12 hours.
  6. Turn the salmon and cure for a further 12 hours.
  7. Slice thinly and serve.
