Captain Royal’s Fish Soup

Captain Royal’s favorite soup is loaded with 400 g wild-caught salmon & 400 g Alaska pollock, saffron and cream – topped with shrimp, aioli and parmesan garlic bread.

Instructions:

  1. Peel & chop the vegetables. Cut the fish into pieces.
  2. Sauté the vegetables in butter & oil for approx. 5 min (without browning them).
  3. Stir in the saffron towards the end.
  4. Pour in the wine and reduce for a couple of minutes.
  5. Add stock, cream & fennel seeds. Simmer until the potato is soft (approx. 10–15 min).
  6. Season with lemon, salt, pepper & thyme.
  7. Add the fish and gently simmer for 3–5 min.
  8. Serve in deep bowls – top with shrimp, dill & aioli. Bread on the side makes it complete.
