Captain's favorite – Scampi pasta with pesto

Ingredients

2 servings

  • 300g vannamei shrimp
  • ½ fresh chili
  • 2 garlic cloves
  • 3 tbsp rapeseed or olive oil
  • Salt & pepper to taste

Sauce:

  • 2 dl cooking cream
  • 1 tsp dijon mustard
  • 2 tsp pesto
  • ca ½ feta cheese
  • ½ chicken stock cube
  • ½ dl chopped parsley
  • 2 tbsp pressed lemon

Pasta:

  • Preferably 1 bag of fresh tagliatelle

How to make

  1. Defrost the shrimp.
  2. Press garlic, finely chop chili & mix in a bowl with oil & shrimp.
  3. Heat a pan, add a little butter if necessary & fry the marinated shrimp for about 30 seconds on each side, salt & pour back into the bowl.
  4. Pour cream, stock cube, pesto, dijon mustard into the pan, bring to a boil & stir at the same time with a whisk.
  5. Finish by mixing in & letting the feta cheese melt. Season with salt & pepper.
  6. Mix the freshly cooked pasta with the sauce, shrimp & parsley.
  7. Finish with squeezed lemon and freshly ground black pepper.
