Captain's favorite – Scampi pasta with pesto
Ingredients
2 servings
300g
vannamei shrimp
½
fresh chili
2
garlic cloves
3 tbsp
rapeseed or olive oil
Salt & pepper to taste
Sauce:
2 dl
cooking cream
1 tsp
dijon mustard
2 tsp
pesto
ca ½
feta cheese
½
chicken stock cube
½ dl
chopped parsley
2 tbsp pressed
lemon
Pasta:
Preferably 1 bag of
fresh tagliatelle
How to make
Defrost the shrimp.
Press garlic, finely chop chili & mix in a bowl with oil & shrimp.
Heat a pan, add a little butter if necessary & fry the marinated shrimp for about 30 seconds on each side, salt & pour back into the bowl.
Pour cream, stock cube, pesto, dijon mustard into the pan, bring to a boil & stir at the same time with a whisk.
Finish by mixing in & letting the feta cheese melt. Season with salt & pepper.
Mix the freshly cooked pasta with the sauce, shrimp & parsley.
Finish with squeezed lemon and freshly ground black pepper.
